The ladies in the shop where I buy avocados are charming and caring. They are always attentive about the quality of the fruit they sell me, especially regarding how ripe the avocados may be. And though I have never had any avocado complaints from their shop, buying avocados in Spain – such as with mangoes and papayas too – can sometimes be a tricky affair.
So even when I receive their attention to ensure I always have perfect avocados, I don’t know what I do that somehow 75% of the times I end up with overripe avocados more than one week later. Here is an easy way to use them. Plus, it also makes a nice breakfast!
Overripe Avocado Toast Recipe
Ingredients (makes 2 large toasts)
1 overripe avocado, 2 slices bread, coarse sea salt, black pepper
Simply cut the avocado in half. The pulp of the fruit is already a soft buttery texture. Spread it on the bread. Sprinkle some coarse sea salt and black pepper on top.
