The waffles in the North of France are quite different to what we would normally think of as waffles. They are thinner, biscuit-like, wafer-like (if that is possible) with some filling inside. So what is this weird biscuit wafer texture I’m trying to describe? It’s sort of like chewy inside, while have a slight crunchiness in the outer crust. The filling brings some juiciness. My description may sound strange, but the proportion of juicy, chewy and crunchy are perfect.
