Ticking Off my Bucket List 2015

When I think about all the things I haven’t achieved in 2015, I kind of feel low. You know, of course I’m not perfect. I do realise that I’ve done a ton of things but I feel like I’ve achieved nothing. Have you ever felt that way? So as to not end the year with a negative note, and put myself into a positive mindset to begin 2016 – where I do intend to put myself forward into achieving as much as possible – I thought I’d look back through 2015 and see what I have done.

This summer we went on a road trip through Spain, all the way from Barcelona to Andalucía, the southernmost tip of Spain. It’s something I’ve wanted to do for years. And yay, we did it this year.

With regards to food, last year I made a food bucket list. Here are the things I’ve ticked off from it now:

Make a New York style cheesecake

Only a few weeks ago I made my first cheesecake. It was so good that I made another one the following week. According to the cheesy ingredients it can be debated  whether it is a proper New York Style cheese cake or not. But it does taste like one.

Visit a winery

This summer I visited more than one winery, but only brought my Nikon to one. It was beautiful, I learnt a lot, and you can see it here.

Be comfortable making my own pastry

OK, this point is semi ticked off. I don’t have proper photographic evidence, but lately I’ve been making my own pastry with regards to some desserts. When it comes to savouries, I still need to learn how to do that.

Visit a honey farm

Even though I didn’t bring my camera into the actual bee farm section – because of the astronaut type suit – I did do a small easy peasy course on candle making here.

Make granola

I have done it. No I didn’t photograph it…

Make vegetarian burgers

These were vegetarian. And they are incredible tasty too.

Make tarte tatin

I only photographed the first flop looking but not flop tasting one. I did make more tarte tatin after that and they’re great. Guess what, they are so easy to make too. As long as you have an adequate baking tray to make it in.

    Sofia, you inspire others with your beautiful photography, delicious recipes and wonderful stories. You should be very proud of that along with all of your other accomplishments. To answer your question about achieving nothing, I feel like that all the time. Sometimes we are very hard on ourselves.

    This was a wonderful foray into your life, Sofia. The road trip from Barcelona to Andalucía was super important! And the food adventures, good for you! Every year I send Christmas cards to a few friends and include a newsy newsletter. It gives me an opportunity to see how much we have accomplished as a family, but of course, how much I’ve accomplished myself. My newsletters ALWAYS revolve around food, of course, so I know that this past year 2015 I have learned A LOT and cooked/baked A LOT of new dishes.
    So maybe you should do the same thing, even if you don’t mail to friends, it will be a JOURNAL of sorts…because after all, life is just one fabulous JOURNEY right?

    That’s an interesting idea, Sofia! I haven’t been doing much for myself this year, because it’s Ashton’s first year and it’s really everything about him. Now that he’s doing wobbly walks on his own, I’m even crazier! I’m hoping to get some bits of my life back in another year or so. *fingers crossed*

    Goodness, you have done a lot of wonderful things this past year. The road trip around Spain is huge! We were fortunate to see your evocative photos of parts of it! I loved seeing and hearing about the honey farm, the winery, and the paella making, among your other activities. So much good stuff that you posted about. Thank you for being willing to share parts of your life and experiences with us. They have certainly made my life richer. I don’t have a bucket list, but in 2016 I hope to get back to New York City, learn to play the banjo properly, and finish a writing project I’ve been working on. Oh! And you inspired me with the cheesecake making! I’m trying to master an Italian ricotta style one. Cheers! 🙂
